- Heat olive oil in a large pot. Sauté onion for 4–5 minutes until translucent.
- Add garlic, carrots, celery, zucchini, and green beans. Cook 5–7 minutes, stirring occasionally.
- Stir in tomatoes, broth, thyme, basil, bay leaf, salt, and pepper. Bring to boil, then reduce to a gentle simmer for 20 minutes.
- Add corn, peas, and spinach during the last 5–7 minutes of cooking. Remove bay leaf before serving.
- Adjust seasoning to taste and serve hot with your favorite garnish.
Notes
