Method
- Preheat oven to 375°F and line baking sheets with parchment paper.
- Pour powdered sugar into a shallow bowl and set aside.
- In a mixing bowl, combine strawberry cake mix, eggs, and vegetable oil until a soft dough forms.
- Scoop tablespoon-sized portions and roll into balls.
- Roll each dough ball generously in powdered sugar.
- Place dough balls on prepared baking sheets, spacing 2 inches apart.
- Bake for 8–10 minutes until tops crack and edges are set.
- Cool on baking sheet briefly, then transfer to a wire rack to cool completely.
Notes
Do not overbake. Cookies will look slightly underdone in the center but will set as they cool for the perfect soft texture.
