Ingredients
  

  • 2 cups sushi rice
  • 2.5 cups water
  • 1/4 cup rice vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1 lb fresh salmon diced
  • 1/2 cup Japanese mayonnaise
  • 2 tablespoons sriracha
  • 1 teaspoon sesame oil
  • 1/2 cup chopped green onions
  • 1 sheet nori cut into strips
  • Tobiko for garnish

Method
 

  1. Rinse sushi rice until water runs clear.
  2. Cook rice with water according to package instructions.
  3. Mix rice vinegar, sugar, and salt until dissolved.
  4. Fold vinegar mixture into cooked rice.
  5. Preheat oven to 375°F.
  6. Mix salmon, mayonnaise, sriracha, sesame oil, and green onions.
  7. Spread rice evenly in a greased baking dish.
  8. Spread salmon mixture over rice.
  9. Bake for 25–30 minutes until salmon is cooked.
  10. Garnish with nori and tobiko before serving.

Notes

Serve warm with nori sheets for wrapping. Adjust sriracha to control heat level.
