Ingredients
  

  • 1.5 lb boneless skinless chicken breasts, cut into 1-inch cubes
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon fresh grated ginger
  • 2 cloves garlic minced
  • 1/2 teaspoon red pepper flakes optional
  • 1 cup fresh pineapple diced
  • 1/2 red bell pepper diced
  • 1/4 red onion finely diced
  • 1/4 cup chopped cilantro
  • 1 jalapeño seeded and minced (optional)
  • 2 tablespoons lime juice
  • 1/4 teaspoon salt
  • 12 small corn or flour tortillas
  • 1 tablespoon olive oil
  • 1/2 cup shredded cabbage or slaw mix
  • Avocado slices or sauce optional

Method
 

  1. In a bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, ginger, garlic, and red pepper flakes.
  2. Add chicken cubes, toss to coat, cover, and marinate for at least 30 minutes.
  3. In another bowl, combine pineapple, bell pepper, red onion, cilantro, jalapeño, lime juice, and salt to make the salsa.
  4. Heat olive oil in a skillet over medium-high heat.
  5. Remove chicken from marinade and cook for 5–7 minutes until golden and cooked through.
  6. Warm tortillas in a dry skillet or microwave.
  7. Assemble tacos with cabbage, chicken, pineapple salsa, and optional toppings.

Notes

Do not over-marinate the chicken beyond 4 hours. Drain pineapple well to avoid excess moisture in the tacos.
