- In a bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, ginger, garlic, and red pepper flakes.
- Add chicken cubes, toss to coat, cover, and marinate for at least 30 minutes.
- In another bowl, combine pineapple, bell pepper, red onion, cilantro, jalapeño, lime juice, and salt to make the salsa.
- Heat olive oil in a skillet over medium-high heat.
- Remove chicken from marinade and cook for 5–7 minutes until golden and cooked through.
- Warm tortillas in a dry skillet or microwave.
- Assemble tacos with cabbage, chicken, pineapple salsa, and optional toppings.
Notes
Do not over-marinate the chicken beyond 4 hours. Drain pineapple well to avoid excess moisture in the tacos.
