Ingredients

  • 4 boneless skinless chicken breasts
  • 1 cup BBQ sauce
  • 1 cup pineapple juice
  • 1 cup crushed pineapple drained
  • 1 tablespoon soy sauce
  • 1 tablespoon olive oil
  • 2 cloves garlic minced
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Fresh pineapple slices optional
  • Fresh chopped cilantro optional

Method

  1. In a large bowl, mix BBQ sauce, pineapple juice, crushed pineapple, soy sauce, olive oil, garlic, onion powder, salt, and black pepper.
  2. Add chicken breasts to the marinade and coat well.
  3. Cover and refrigerate for at least 2 hours or overnight for best flavor.
  4. Preheat the grill to medium-high heat and lightly oil the grates.
  5. Grill chicken for 5–7 minutes per side, basting with reserved marinade, until internal temperature reaches 165°F.
  6. Grill pineapple slices for 2–3 minutes per side if using.
  7. Remove chicken from grill, rest for 5 minutes, garnish, and serve.

Notes

Do not marinate longer than 24 hours, as pineapple can overly tenderize the chicken. Use low-sugar BBQ sauce for a healthier option.
