- Preheat oven to 200°C (400°F) and line a baking sheet with foil.
- Sauté onion in olive oil for 3-4 minutes, add garlic and cook 1 minute; cool completely.
- In a bowl, combine chicken, cooled aromatics, breadcrumbs, milk, Parmesan, egg, parsley, Italian seasoning, and salt.
- Shape two-thirds of mixture into a rectangle, create a channel, and add mozzarella slices; cover with remaining mixture and seal.
- Spread marinara sauce on top and bake 45 minutes.
- Mix panko, Parmesan, butter, and parsley.
- Top meatloaf with shredded mozzarella and breadcrumb mixture; bake 15-20 minutes until golden and internal temp reaches 74°C (165°F).
- Rest 10 minutes before slicing.
Notes
Avoid overmixing the meat mixture, cool aromatics fully, and rest the meatloaf before slicing for clean cuts and optimal texture.
