Ingredients
  

  • 2 tablespoons olive oil
  • 80 g onion finely diced
  • 2 garlic cloves minced
  • 900 g ground chicken
  • 60 g seasoned breadcrumbs
  • 2 teaspoons whole milk
  • 30 g Parmesan cheese freshly grated
  • 1 large egg
  • 2 tablespoons fresh parsley finely chopped
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon sea salt
  • 3 mozzarella cheese strings cut into slices
  • 120 ml marinara sauce
  • 2 tablespoons panko breadcrumbs
  • 20 g Parmesan cheese grated
  • 1 tablespoon butter melted
  • 1 tablespoon fresh parsley chopped
  • 120 g mozzarella cheese shredded

Method
 

  1. Preheat oven to 200°C (400°F) and line a baking sheet with foil.
  2. Sauté onion in olive oil for 3-4 minutes, add garlic and cook 1 minute; cool completely.
  3. In a bowl, combine chicken, cooled aromatics, breadcrumbs, milk, Parmesan, egg, parsley, Italian seasoning, and salt.
  4. Shape two-thirds of mixture into a rectangle, create a channel, and add mozzarella slices; cover with remaining mixture and seal.
  5. Spread marinara sauce on top and bake 45 minutes.
  6. Mix panko, Parmesan, butter, and parsley.
  7. Top meatloaf with shredded mozzarella and breadcrumb mixture; bake 15-20 minutes until golden and internal temp reaches 74°C (165°F).
  8. Rest 10 minutes before slicing.

Notes

Avoid overmixing the meat mixture, cool aromatics fully, and rest the meatloaf before slicing for clean cuts and optimal texture.
