Ingredients
  

  • 1 can 15 oz chickpeas, drained and rinsed
  • 1 medium cucumber diced
  • 1/4 cup finely chopped red onion
  • 1 pint cherry tomatoes halved
  • 4 oz crumbled feta cheese
  • 1/2 cup halved Kalamata olives
  • 1/4 cup chopped fresh parsley
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Method
 

  1. Combine chickpeas, cucumber, red onion, tomatoes, feta, and Kalamata olives in a large bowl.
  2. Add chopped parsley and distribute evenly.
  3. Whisk olive oil, lemon juice, oregano, salt, and pepper in a small bowl.
  4. Pour dressing over salad and toss gently.
  5. Taste and adjust seasoning as needed.
  6. Serve immediately or chill 20–30 minutes to allow flavors to meld.

Notes

For best results, chill the salad before serving. Rinse chickpeas thoroughly to remove excess sodium.
