Ingredients

  • 2 cups cooked jasmine rice day-old preferred
  • 200 g sliced beef or chicken
  • 2 tablespoons Japanese BBQ sauce
  • 1 tablespoon soy sauce
  • 2 eggs beaten
  • 1 tablespoon vegetable oil
  • 2 cloves garlic minced
  • 1/2 cup mixed vegetables carrots, bell peppers, peas
  • 2 tablespoons chopped scallions
  • Salt and pepper to taste
  • Toasted sesame seeds

Method

  1. Heat vegetable oil in a skillet or wok over medium-high heat until shimmering.
  2. Add sliced beef or chicken and sear 2-3 minutes without stirring; cook another 2 minutes until browned, then remove.
  3. Add garlic and mixed vegetables to the skillet and stir-fry 2-3 minutes until tender-crisp.
  4. Push vegetables aside and add beaten eggs; let set 30 seconds, then gently scramble.
  5. Add cooked rice and break up clumps, mixing well with eggs and vegetables.
  6. Return protein to skillet and add Japanese BBQ sauce and soy sauce; mix to coat evenly.
  7. Season with salt and pepper; cook 2-3 minutes until heated through.
  8. Garnish with scallions and toasted sesame seeds before serving.

Notes

Use day-old rice to avoid mushy texture. Cook protein in a single layer to develop proper sear and flavor.
