Ingredients
  

  • 2 large English cucumbers firm, unblemished
  • 1 cup hummus classic, roasted red pepper, or garlic
  • 1/2 cup cherry tomatoes quartered
  • 1/2 cup crumbled feta cheese
  • 1/4 cup Kalamata olives pitted and halved
  • 2 tablespoons fresh parsley finely chopped
  • 1 tablespoon extra virgin olive oil optional drizzle
  • 1/4 teaspoon smoked paprika or black pepper optional garnish

Method
 

  1. Wash and dry cucumbers, leaving skin on. Slice into 1/2-inch to 3/4-inch thick rounds.
  2. Arrange cucumber slices in a single layer on a platter.
  3. Pat tops of slices with a paper towel to remove excess moisture.
  4. Add a dollop of hummus to each cucumber slice with a spoon or piping bag.
  5. Top with cherry tomatoes, feta, and olives for color and flavor.
  6. Sprinkle parsley and drizzle with olive oil. Add smoked paprika or pepper if desired.
  7. Serve immediately for the best crunch and flavor.

Notes

Best enjoyed fresh. Prepare cucumber slices, hummus, and toppings separately up to 6 hours in advance, but assemble bites within 30 minutes of serving to prevent sogginess.
