- In a bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, pepper, and smoked paprika until emulsified.
- Add chicken breasts to the marinade, coating evenly. Cover and refrigerate for 30 minutes to 4 hours.
- Preheat grill to medium-high or oven to 400°F (200°C). Lightly oil grill grates or line a baking sheet with parchment.
- Cook chicken 6-7 minutes per side, or until internal temperature reaches 165°F (75°C).
- Let rest 5 minutes before slicing for juicier, tender results.
