Method
- Cut steak into 1-inch cubes and pat dry. Season with salt and pepper.
- Heat a cast iron skillet over high heat until very hot.
- Sear steak bites 2–3 minutes per side in batches without overcrowding.
- Remove steak and reduce heat to medium-low. Melt butter in skillet.
- Add garlic and cook 1 minute until fragrant.
- Return steak bites to skillet and toss in garlic butter.
- Add Parmesan and toss until melted and creamy.
- Serve immediately and garnish with fresh parsley.
Notes
Pat steak cubes completely dry before searing to ensure a perfect golden crust.
