- Mince garlic cloves finely and sprinkle with salt.
- Use the flat side of a knife to mash garlic into a paste.
- Add mayonnaise to a small bowl.
- Stir in garlic paste until well combined.
- Add olive oil and fresh lemon juice.
- Season with black pepper if desired.
- Whisk until smooth and creamy.
- Refrigerate for at least 10–30 minutes before serving.
