Ingredients
  

Beef Filling
  • 1 lb ground beef 80/20 recommended
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup tomato sauce or salsa
Assembly
  • 1 cup shredded cheese cheddar, mozzarella, or Mexican blend
  • 10 –12 small flour or corn tortillas
  • Cooking spray or oil
  • Fresh cilantro or green onions garnish
  • Sour cream guacamole, or salsa for serving

Method
 

  1. Heat a skillet over medium-high heat. Cook ground beef and onion until browned and softened.
  2. Add garlic, chili powder, cumin, paprika, salt, and pepper. Drain excess grease and stir well.
  3. Stir in tomato sauce and cook for 2 minutes until slightly thickened.
  4. Remove from heat and stir in shredded cheese until melted.
  5. Preheat oven to 425°F (220°C).
  6. Warm tortillas in microwave for 30 seconds to make them pliable.
  7. Spoon filling onto tortillas and roll tightly. Place seam-side down on baking sheet.
  8. Lightly spray or brush with oil and bake for 15–20 minutes until crispy and golden.
  9. Garnish and serve with dipping sauces.

Notes

Warm tortillas before rolling to prevent cracking and avoid overfilling for best crispiness.
