Ingredients
  

  • 1/2 cup unsalted butter softened
  • 1 cup creamy no-stir peanut butter
  • 1/4 teaspoon vanilla extract
  • 3 cups powdered sugar
  • 3 cups chocolate chips
  • 4 teaspoons coconut oil

Method
 

  1. Mix butter and peanut butter until smooth, then add vanilla.
  2. Add powdered sugar one cup at a time until a thick dough forms.
  3. Roll into 1 tablespoon balls and place on a parchment-lined sheet.
  4. Insert a toothpick into each ball and freeze for 30 minutes.
  5. Melt chocolate chips and coconut oil in the microwave until smooth.
  6. Dip peanut butter balls into chocolate, leaving a circle visible on top.
  7. Freeze 15 minutes, remove toothpicks, and smooth holes with a wet finger.
  8. Serve immediately or store as desired.

Notes

If dough becomes sticky, add extra powdered sugar. Freeze peanut butter balls whenever they warm up to keep dipping clean and smooth.
