Method
- Mix butter and peanut butter until smooth, then add vanilla.
- Add powdered sugar one cup at a time until a thick dough forms.
- Roll into 1 tablespoon balls and place on a parchment-lined sheet.
- Insert a toothpick into each ball and freeze for 30 minutes.
- Melt chocolate chips and coconut oil in the microwave until smooth.
- Dip peanut butter balls into chocolate, leaving a circle visible on top.
- Freeze 15 minutes, remove toothpicks, and smooth holes with a wet finger.
- Serve immediately or store as desired.
Notes
If dough becomes sticky, add extra powdered sugar. Freeze peanut butter balls whenever they warm up to keep dipping clean and smooth.
