  • 1 lb ground beef 80/20 blend for flavor and moisture
  • 3 medium potatoes peeled and diced (Russet or Yukon Gold)
  • 1 cup shredded cheddar cheese
  • 1 tbsp olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1/2 cup beef broth low-sodium preferred
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1/2 tsp dried oregano
  • 1 tbsp fresh parsley chopped

Method
 

  1. Heat olive oil in a large skillet over medium heat. Add ground beef and cook 6-8 minutes until browned and caramelized.
  2. Add onion and garlic, cooking 3-4 minutes until fragrant and translucent.
  3. Stir in diced potatoes, salt, pepper, paprika, and oregano. Mix to coat evenly.
  4. Pour in beef broth, cover, and cook on low for 20-25 minutes until potatoes are tender.
  5. Sprinkle cheddar cheese evenly on top, cover again, and cook 2-3 minutes until melted and bubbly.
  6. Remove from heat and garnish with fresh parsley before serving.

Notes

For variety, swap ground beef with ground turkey or sweet potatoes for added nutrients. Gruyère cheese makes a gourmet twist.
