- Heat olive oil in a large skillet over medium heat. Add ground beef and cook 6-8 minutes until browned and caramelized.
- Add onion and garlic, cooking 3-4 minutes until fragrant and translucent.
- Stir in diced potatoes, salt, pepper, paprika, and oregano. Mix to coat evenly.
- Pour in beef broth, cover, and cook on low for 20-25 minutes until potatoes are tender.
- Sprinkle cheddar cheese evenly on top, cover again, and cook 2-3 minutes until melted and bubbly.
- Remove from heat and garnish with fresh parsley before serving.
Notes
For variety, swap ground beef with ground turkey or sweet potatoes for added nutrients. Gruyère cheese makes a gourmet twist.
