- Sprinkle 0.25 ounce gelatin over 0.25 cup cold water and let sit 5 minutes.
- Whisk in 0.75 cup hot water until dissolved. Add 0.5 cup sugar and stir until fully dissolved. Cool 5 minutes.
- In a bowl, mix 1.5 cups Greek yogurt with 1 teaspoon vanilla. Gradually whisk in gelatin mixture until smooth.
- Toss 1 cup chopped strawberries with 1 tablespoon honey and fold into yogurt mixture.
- Pour into dish and refrigerate at least 4 hours until firm before slicing and serving.
Notes
For a different flavor, try using other fruits like blueberries or raspberries. Ensure the gelatin mixture is cooled sufficiently before adding to the yogurt to prevent curdling. This recipe is best enjoyed chilled.
