Ingredients

  • 4.4 oz round brie cheese
  • tbsp fig preserves
  • Sea salt to taste
  • ½ tsp diced fresh rosemary
  • 1 tbsp chopped pecans
  • 1 tbsp chopped dried figs
  • 1 tsp pumpkin seeds optional
  • 1 tbsp honey
  • Toasted bread slices or bagel crisps for serving
  • Fresh fruit like apples pears, or grapes (for garnish)

Method

  1. Preheat oven to 375°F (190°C) and position rack in the center.
  2. Carefully score and remove the top rind from the brie wheel, leaving the sides intact.
  3. Place brie in a small oven-safe dish or cast iron skillet.
  4. Spread fig preserves evenly across the exposed cheese surface.
  5. Sprinkle with sea salt and rosemary for aromatic depth.
  6. Top with chopped pecans, dried figs, and optional pumpkin seeds, gently pressing into the jam.
  7. Bake for 15–20 minutes until soft, gooey, and lightly bubbling.
  8. Drizzle with honey and serve immediately with toasted bread and fruit.

Notes

Use only 1½ tablespoons of fig preserves to avoid overflow. Don’t remove side rinds to prevent cheese from leaking. Serve within 10 minutes of baking for the perfect gooey texture.
