- In a medium bowl, combine the Greek yogurt, peanut butter, honey or maple syrup, and vanilla extract. Stir until the mixture is smooth and well combined.
- Fold in the mini chocolate chips and a pinch of salt if using, making sure they are evenly distributed through the yogurt mixture.
- Line a baking sheet with parchment paper. Use a tablespoon or small cookie scoop to drop mounds of the mixture onto the sheet, leaving a little space between each bite. Sprinkle extra chocolate chips on top if you like.
- Place the baking sheet in the freezer for at least 2 hours, or until the bites are completely firm.
- Once frozen, transfer the bites to an airtight container or freezer bag. Store in the freezer for up to 1 month and enjoy straight from the freezer.
