Ingredients
  

  • 1 tbsp olive oil
  • 1 large onion diced
  • 1 tbsp minced garlic 3 cloves
  • 2 cups chicken broth
  • cup sour cream
  • 1 lb boneless skinless chicken breasts diced
  • 2 14 oz cans great Northern beans, drained
  • 1 cup corn kernels
  • 2 4 oz cans mild green chiles with juices
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • ½ tsp dried oregano
  • ½ tsp salt
  • ½ tsp black pepper

Method
 

  1. Heat olive oil in a large pot over medium-high heat. Add diced onion and cook 4 minutes until softened and translucent. Add garlic and cook 30 seconds more.
  2. Add chicken broth, beans, green chiles, diced chicken, corn, chili powder, cumin, oregano, salt, and pepper. Stir to combine.
  3. Bring to a boil, then reduce heat to low. Cover and simmer for 10 minutes until chicken is cooked through.
  4. In a small bowl, whisk sour cream with ½ cup hot chili liquid to temper. Stir back into pot until smooth and creamy.
  5. Taste and adjust seasoning. Serve hot with your favorite garnishes.

Notes

For best results, dice chicken evenly so it cooks quickly and stays tender. Always temper sour cream before adding to hot chili to prevent curdling.
