  • 3 ripe bananas mashed
  • 1/3 cup melted butter
  • 3/4 cup sugar
  • 1 large egg beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1.5 cups all-purpose flour
  • 1/2 cup chopped walnuts
  • Coconut oil or applesauce as butter substitute
  • Brown sugar as alternative sweetener
  • Pecans almonds, or chocolate chips as walnut substitutes
  • Whole wheat pastry flour for added fiber

Method
 

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. Mash bananas in a mixing bowl, keeping small chunks for texture.
  3. Mix in melted butter, sugar, egg, and vanilla extract until smooth.
  4. Gently stir in baking soda, salt, and flour until just combined.
  5. Fold in chopped walnuts evenly.
  6. Pour batter into pan and bake 60–65 minutes, tenting with foil if browning too quickly.
  7. Cool at least 15 minutes before slicing for best texture and flavor.
