- In a bowl, whisk together soy sauce, tomato paste, Worcestershire sauce, garlic powder, honey, ginger, and red pepper flakes.
- Add chicken pieces and diced red bell pepper to the crockpot.
- Pour the sauce over the chicken and stir to coat evenly.
- Drain pineapple chunks, reserving the juice, and add pineapple to the crockpot.
- In a small bowl, mix reserved pineapple juice, chicken broth, and cornstarch until smooth.
- Pour the mixture into the crockpot and stir well.
- Cover and cook on low for 5–7 hours or on high for 3–4 hours, until chicken is tender and cooked through.
- Taste and adjust seasoning if needed, then garnish with green onions before serving.
Notes
Do not overcook, as pineapple can overly tenderize the chicken. Use low-sodium soy sauce to control salt levels.
