Ingredients
  

  • 1 1/4 pounds boneless skinless chicken thighs, cut into bite-sized pieces
  • 1/3 cup low-sodium soy sauce
  • 1 tablespoon tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 2 tablespoons honey
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon red pepper flakes
  • 1 red bell pepper diced
  • 1 20-ounce can pineapple chunks with juice
  • 1/4 cup chicken broth
  • 2 teaspoons cornstarch
  • Sliced green onions for garnish

Method
 

  1. In a bowl, whisk together soy sauce, tomato paste, Worcestershire sauce, garlic powder, honey, ginger, and red pepper flakes.
  2. Add chicken pieces and diced red bell pepper to the crockpot.
  3. Pour the sauce over the chicken and stir to coat evenly.
  4. Drain pineapple chunks, reserving the juice, and add pineapple to the crockpot.
  5. In a small bowl, mix reserved pineapple juice, chicken broth, and cornstarch until smooth.
  6. Pour the mixture into the crockpot and stir well.
  7. Cover and cook on low for 5–7 hours or on high for 3–4 hours, until chicken is tender and cooked through.
  8. Taste and adjust seasoning if needed, then garnish with green onions before serving.

Notes

Do not overcook, as pineapple can overly tenderize the chicken. Use low-sodium soy sauce to control salt levels.
