Ingredients
  

  • 1/2 cup unsalted butter melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/2 cup mini chocolate chips optional
  • 1 cup shredded coconut
  • 1/2 cup marshmallow fluff or mini marshmallows
  • 1/2 cup heavy cream
  • 1 tablespoon butter
  • 1/4 teaspoon vanilla extract

Method
 

  1. Preheat oven to 350°F and line an 8×8-inch baking pan.
  2. Mix melted butter and sugar until smooth.
  3. Whisk in eggs and vanilla extract.
  4. Add cocoa powder, flour, salt, and baking powder and mix until just combined.
  5. Fold in chocolate chips if using.
  6. Spread batter evenly into prepared pan.
  7. Bake for 20–25 minutes until a toothpick has moist crumbs.
  8. Cool brownies completely.
  9. Heat heavy cream, butter, and vanilla in a saucepan until melted.
  10. Stir in marshmallow fluff until smooth.
  11. Spread marshmallow mixture over cooled brownies.
  12. Sprinkle shredded coconut evenly on top and gently press.
  13. Refrigerate for 30 minutes, then slice and serve.

Notes

Allow brownies to cool fully before adding topping to prevent melting. Store leftovers refrigerated for best texture.
