Ingredients
  

  • 1 lb large shrimp peeled and deveined
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • 1 tablespoon olive oil
  • 1 tablespoon fresh lime juice
  • 2 cups green cabbage shredded
  • 1 cup carrots julienned
  • 3 tablespoons mayonnaise
  • 1 tablespoon fresh lime juice
  • 2 tablespoons fresh cilantro chopped
  • Salt to taste
  • 8 corn tortillas
  • Ripe avocado slices
  • 1/3 cup Cotija cheese crumbled
  • Fresh lime wedges
  • Hot sauce

Method
 

  1. Pat shrimp dry. Mix chili powder, cumin, paprika, garlic powder, salt, pepper, olive oil, and lime juice. Toss shrimp and marinate 10 minutes.
  2. Mix mayonnaise, lime juice, and cilantro. Add cabbage and carrots; toss and season with salt.
  3. Heat a skillet over medium-high. Add shrimp in a single layer and cook 2–3 minutes per side until opaque.
  4. Warm tortillas in a skillet or microwave until soft and pliable.
  5. Assemble tacos with slaw, shrimp, avocado, Cotija, and lime wedges.

Notes

Avoid overcooking shrimp—they become rubbery fast. Remove from heat as soon as opaque.
