Ingredients
  

  • 1 can Black Beans Rinsed and drained
  • 120 g Greek Yogurt Plain unsweetened
  • 64 g Natural Peanut Butter Or almond/sunflower butter
  • 2 large Eggs Room temperature
  • 5 ml Vanilla Extract Pure vanilla extract
  • 50 g Cocoa Powder Unsweetened
  • 40 g Dark Chocolate Chips Or sugar-free chocolate chips
  • 28 g Coconut Oil Melted
  • 30 ml Pure Maple Syrup Or honey/agave
  • 2 g Espresso Powder Or instant coffee granules
  • 50 g Rolled Oats Ground into flour using a food processor
  • 2 tsp Baking Powder
  • 1 pinch Sea Salt

Method
 

  1. Process the black beans until smooth.
  2. Mix in Greek yogurt and peanut butter.
  3. Add the dry ingredients and pulse.
  4. Drizzle in syrup and melted coconut oil.
  5. Fold in the chocolate chips by hand.

Notes

These brownies are best served warm with a scoop of ice cream or a dollop of yogurt on top.
