Ingredients
  

  • 1 fresh pineapple peeled and sliced
  • 2 cups granulated sugar
  • 1 cup apple cider vinegar
  • 1 tbsp crushed red pepper flakes
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1/2 tsp salt

Method
 

  1. Peel the pineapple and slice into 1/2-inch rings or chunks. Set aside.
  2. In a large pot, combine sugar, apple cider vinegar, red pepper flakes, cinnamon, ginger, and salt.
  3. Bring the mixture to a boil over medium heat, stirring until sugar dissolves.
  4. Add pineapple pieces and reduce heat to a simmer.
  5. Cook for 10–15 minutes until pineapple is tender and translucent.
  6. Remove from heat and let cool slightly.
  7. Spoon pineapple and syrup into sterilized jars and seal.
  8. Cool completely before refrigerating or processing for long-term storage.

Notes

Adjust red pepper flakes to control heat. Use ripe pineapple for best flavor and texture.
