Method
- Cook sausage in skillet over medium-high heat for 8–10 minutes until browned. Drain on paper towels to remove excess grease.
- In a large bowl, whisk eggs, half-and-half, salt, pepper, cayenne, mustard, sage, and chives until smooth and combined.
- Grease a 13x9-inch baking dish. Layer cubed bread, then sausage, then cheeses evenly in the dish.
- Pour the egg mixture over layers, ensuring all bread is soaked. Gently press bread down into custard.
- Cover with plastic wrap and refrigerate overnight (8–12 hours) to allow bread to absorb the mixture.
- Preheat oven to 350°F. Remove casserole from fridge and rest at room temperature for 30 minutes.
- Bake uncovered for 45–50 minutes until golden and center is set. Internal temp should reach 160°F.
- Let rest 5 minutes before slicing and serving.
