Ingredients
  

  • 1 lb breakfast sausage
  • 8 jumbo eggs
  • 2 cups half-and-half
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 –1/2 tsp cayenne pepper optional
  • 1/2 tsp ground mustard
  • 1 tsp dried sage
  • 1/2 tsp dried chives
  • 1 1/2 cups yellow sharp cheddar cheese shredded
  • 1 cup extra sharp white cheddar cheese shredded
  • 10 slices butter or sandwich bread cubed
Substitutions:
  • Use turkey sausage for lighter version
  • Sourdough bread for tangier flavor
  • Monterey Jack for milder cheese blend

Method
 

  1. Cook sausage in skillet over medium-high heat for 8–10 minutes until browned. Drain on paper towels to remove excess grease.
  2. In a large bowl, whisk eggs, half-and-half, salt, pepper, cayenne, mustard, sage, and chives until smooth and combined.
  3. Grease a 13x9-inch baking dish. Layer cubed bread, then sausage, then cheeses evenly in the dish.
  4. Pour the egg mixture over layers, ensuring all bread is soaked. Gently press bread down into custard.
  5. Cover with plastic wrap and refrigerate overnight (8–12 hours) to allow bread to absorb the mixture.
  6. Preheat oven to 350°F. Remove casserole from fridge and rest at room temperature for 30 minutes.
  7. Bake uncovered for 45–50 minutes until golden and center is set. Internal temp should reach 160°F.
  8. Let rest 5 minutes before slicing and serving.
