Method
- Preheat oven to 400°F (200°C). Wash and halve potatoes.
- Combine potatoes, peppers, onion, and garlic in a large bowl.
- Drizzle with olive oil and season with paprika, salt, and pepper. Toss well.
- Add sliced kielbasa and toss again.
- Spread mixture evenly on a baking sheet.
- Bake 15 minutes, stir, then bake another 10–15 minutes until potatoes are tender and kielbasa is browned.
- Let cool 2–3 minutes and garnish with parsley before serving.
Notes
Cut all ingredients to similar sizes for even cooking. Avoid overcrowding the pan to ensure crispy potatoes and proper browning.
