Method
- Preheat oven to 375°F and grease a 12-cup muffin tin.
- Combine ground beef, onion, garlic, breadcrumbs, egg, milk, Worcestershire sauce, smoked paprika, salt, and pepper. Mix gently and divide into muffin cups.
- Whisk BBQ sauce, bourbon, brown sugar, and Dijon in a saucepan. Simmer 3–4 minutes and brush glaze over each meatloaf cup.
- Bake 20–25 minutes until internal temperature reaches 160°F. Let rest 5 minutes.
- Boil potatoes in salted water for 15 minutes. Drain and mash with butter, milk, salt, and pepper.
- Pipe or spoon mashed potatoes onto cooled meatloaf cupcakes and garnish with chives.
Notes
Avoid overmixing the meat mixture to prevent dense cupcakes, and allow meatloaf to rest before topping to retain moisture.
