Ingredients
  

  • 3 small scoops 140g vanilla ice cream
  • 50 ml Irish cream liqueur e.g., Baileys
  • 50 ml chilled ginger ale
  • Dairy spray cream for topping
  • 1 cocktail cherry optional
  • Optional garnish: crushed candy canes or Humbug sweet
  • Substitutions: salted caramel or coffee ice cream club soda instead of ginger ale, coconut whipped cream for dairy-free

Method
 

  1. Chill a tall glass in the freezer for 2–3 minutes.
  2. Add 3 scoops of vanilla ice cream into the chilled glass.
  3. Slowly drizzle Irish cream liqueur over the ice cream for a marbled effect.
  4. Gently pour chilled ginger ale down the side of the glass to preserve fizz.
  5. Top with whipped cream, garnish with a cherry, and sprinkle crushed candy if desired.
