Method
- Preheat oven to 350°F and line baking pans with parchment paper.
- Mix flour, salt, and sugar together on low speed.
- Add cubed butter and mix until crumbly.
- Mix in vanilla and almond extracts until combined.
- Press about 2 tbsp of dough into each cookie base.
- Spread 1 tsp raspberry jam into the center of each cookie.
- Top with remaining crumble dough.
- Chill cookies for 15–20 minutes.
- Bake for 15–18 minutes until lightly golden.
- Cool completely before serving.
Notes
Do not overmix the dough. Chill cookies before baking to prevent spreading and allow cookies to cool fully for best texture.
