Ingredients
  

  • 2 cups all-purpose flour
  • 1 tsp kosher salt
  • ¾ cup granulated sugar
  • 1 cup unsalted butter cold and cubed
  • 1 tsp vanilla extract
  • ½ tsp almond extract
  • 1 cup raspberry jam

Method
 

  1. Preheat oven to 350°F and line baking pans with parchment paper.
  2. Mix flour, salt, and sugar together on low speed.
  3. Add cubed butter and mix until crumbly.
  4. Mix in vanilla and almond extracts until combined.
  5. Press about 2 tbsp of dough into each cookie base.
  6. Spread 1 tsp raspberry jam into the center of each cookie.
  7. Top with remaining crumble dough.
  8. Chill cookies for 15–20 minutes.
  9. Bake for 15–18 minutes until lightly golden.
  10. Cool completely before serving.

Notes

Do not overmix the dough. Chill cookies before baking to prevent spreading and allow cookies to cool fully for best texture.
