  • 1 lb ground beef 80/20 blend
  • 2 cups diced potatoes
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 medium onion chopped
  • 2 garlic cloves minced
  • 4 cups beef broth low-sodium preferred
  • 1 can 14.5 oz diced tomatoes
  • 1 cup corn kernels
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 tbsp fresh parsley chopped

Method
 

  1. Brown the ground beef in a large soup pot over medium-high heat for 5–7 minutes, then drain excess fat.
  2. Add onions and garlic, sauté 2–3 minutes until fragrant.
  3. Stir in carrots and celery, cook 3–5 minutes until slightly softened.
  4. Add potatoes, diced tomatoes, corn, Italian seasoning, and beef broth. Bring to a simmer.
  5. Cover and simmer 25–30 minutes until potatoes are fork-tender.
  6. Adjust seasoning with salt and pepper, garnish with fresh parsley, and serve.
