Ingredients

  • 1 mini seedless watermelon 3-4 pounds, carved into a jack-o'-lantern
  • Fresh watermelon chunks from the carved melon
  • 1 small pineapple cut into chunks
  • 6 oz fresh blackberries
  • 6 oz fresh blueberries
  • 1 small honeydew melon cut into chunks
  • 4 clementines peeled and segmented
  • Optional substitutions: mango instead of pineapple green grapes instead of honeydew, mandarin oranges instead of clementines, pomegranate seeds for decoration

Method

  1. Slice a small piece off the bottom of the watermelon so it sits flat. Draw and carve a jack-o'-lantern face.
  2. Scoop out watermelon flesh, leaving some red around the eyes for effect. Cut into 1-inch chunks.
  3. Prepare pineapple, honeydew, blueberries, and clementines into uniform pieces.
  4. Mix all fruits in a large bowl, combining watermelon, pineapple, honeydew, and clementines gently.
  5. Position carved watermelon on a serving platter and fill with the fruit salad, allowing some to spill out of the mouth.
  6. Scatter blackberries on top and around the salad for a spooky “spider” effect.

Notes

Carve the watermelon no more than 4 hours before serving for best appearance. Add blackberries last to avoid staining other fruits. Refrigerate until serving and avoid leaving out for more than 2 hours.
