Ingredients
  

  • 4 ears fresh corn husked and cleaned
  • 2 tablespoons olive oil
  • Sea salt and freshly cracked black pepper to taste
  • 4 tablespoons mayonnaise or vegan mayo
  • 80 ml sour cream or Mexican crema
  • 1.5 teaspoons Cajun seasoning blend
  • 1.5 teaspoons smoked paprika
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 tablespoon fresh cilantro finely minced
  • 60 g crumbled feta or cotija cheese
  • 1 tablespoon fresh lime juice
  • 1 teaspoon chipotle or chili powder optional for extra heat

Method
 

  1. Preheat grill to medium-high (400–450°F) and lightly oil the grates.
  2. Brush each corn cob with olive oil, season with salt and pepper.
  3. Grill corn 10–15 minutes, turning every 3–4 minutes until evenly charred and tender.
  4. In a bowl, whisk mayonnaise, sour cream, Cajun seasoning, smoked paprika, onion powder, and garlic powder until smooth.
  5. Remove corn from grill and immediately brush with Cajun cream sauce while still hot.
  6. Top with crumbled cheese, cilantro, a squeeze of lime juice, and a sprinkle of chipotle powder.
  7. Serve warm for best flavor and texture.

Notes

Substitute mayonnaise and sour cream with Greek yogurt or cashew cream for a lighter or dairy-free version. Use nutritional yeast instead of cheese for a vegan option. Avoid overcooking corn to preserve its natural sweetness and crunch.
