Ingredients
  

  • cups all-purpose flour
  • 3 large eggs room temperature
  • 1 cup granulated sugar
  • ½ cup butter melted
  • 1 cup half and half cream sour cream, or heavy cream
  • 2 tablespoons lemon juice
  • Zest of 1 whole lemon
  • teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup powdered sugar
  • 2 tablespoons lemon juice for glaze
  • 1 tablespoon milk

Method
 

  1. Preheat oven to 350°F and grease or line a 9x5-inch loaf pan.
  2. In a large bowl, whisk eggs, sugar, cream, melted butter, and lemon juice until smooth.
  3. Add flour, baking powder, baking soda, salt, and lemon zest, mixing just until combined.
  4. Pour batter into prepared pan and tap gently to release air bubbles.
  5. Bake for about 55 minutes or until a toothpick inserted in the center comes out clean.
  6. Cool in the pan for 10 minutes, then transfer loaf to a wire rack.
  7. Mix powdered sugar, lemon juice, and milk to form the glaze.
  8. Pour glaze over warm cake and allow it to set before slicing.

Notes

Do not overmix the batter to keep the loaf tender. Fresh lemon zest is key for the best flavor.
