Ingredients
  

  • 2 cod fillets 6–8 oz each
  • 2 tablespoons extra virgin olive oil
  • 3 tablespoons unsalted butter
  • 4 garlic cloves minced
  • 1 tablespoon fresh parsley finely chopped
  • 1 teaspoon red chili flakes
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper

Method
 

  1. Pat cod fillets dry and season both sides with salt and pepper.
  2. Heat olive oil in a skillet over medium-high until shimmering.
  3. Sear cod, presentation side down, for 3–4 minutes without moving.
  4. Flip and cook another 3 minutes until fish flakes and reaches 145°F.
  5. Transfer cod to a warm plate and tent with foil.
  6. Reduce heat and add butter to the skillet. Add garlic and cook 1 minute.
  7. Stir in parsley and chili flakes; cook 30 seconds.
  8. Return cod to skillet and spoon garlic butter over fillets before serving.

Notes

Always dry cod thoroughly before cooking to ensure proper searing and prevent steaming.
