Ingredients

  • 1.5 lbs ground beef 85/15 blend
  • 1 medium onion finely diced
  • 2 cloves garlic minced
  • 1/2 cup seasoned breadcrumbs
  • 1/4 cup whole milk
  • 1 large egg
  • 1 tbsp Worcestershire sauce
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 cup ketchup
  • 2 lbs Yukon Gold potatoes peeled and sliced
  • 1/2 cup sour cream
  • 1/4 cup warm milk
  • 2 tbsp unsalted butter melted
  • 1 cup sharp cheddar cheese shredded
  • 1/4 cup green onions chopped
  • Salt and white pepper to taste
  • Optional: Greek yogurt instead of sour cream or cauliflower mash as a potato alternative

Method

  1. Preheat oven to 375°F (190°C) and grease a 9x13-inch baking dish.
  2. In a mixing bowl, combine ground beef, onion, garlic, breadcrumbs, milk, egg, Worcestershire, salt, and pepper. Mix gently.
  3. Press mixture into baking dish and spread ketchup on top.
  4. Bake for 25 minutes.
  5. Meanwhile, boil sliced potatoes for 15 minutes until fork-tender. Drain and mash with sour cream, milk, and butter.
  6. Spread mashed potatoes over meatloaf, creating peaks for texture.
  7. Top with cheddar cheese and green onions.
  8. Bake another 20 minutes until cheese is melted and bubbly (internal temp 160°F).
  9. Rest 10 minutes before serving.

Notes

Avoid overmixing the meat mixture to keep the meatloaf tender. Always allow the casserole to rest before cutting for clean servings.
