- Bake for 25 minutes.
- Meanwhile, boil sliced potatoes for 15 minutes until fork-tender. Drain and mash with sour cream, milk, and butter.
- Spread mashed potatoes over meatloaf, creating peaks for texture.
- Top with cheddar cheese and green onions.
- Bake another 20 minutes until cheese is melted and bubbly (internal temp 160°F).
- Rest 10 minutes before serving.
