  • 12.5 oz can chunk chicken breast drained (or rotisserie, thighs, or turkey)
  • 8 oz cream cheese softened (or Greek cream cheese, cashew cream cheese)
  • 4 oz finely grated Colby Jack cheese or sharp cheddar, pepper jack, mozzarella
  • 1/2 cup buffalo wing sauce Frank's RedHot or homemade
  • 1/2 cup ranch dressing or blue cheese, Greek yogurt ranch
  • Serving accompaniments: tortilla chips celery, carrots, baguette slices, pretzel chips

Method
 

  1. Allow cream cheese to reach room temperature. In a 3- or 6-quart crock pot, combine chicken, cream cheese, Colby Jack, buffalo sauce, and ranch dressing. Mix well, breaking up cream cheese chunks.
  2. Cook on LOW for 1.5–2 hours, stirring every 30 minutes, until smooth and creamy. Larger slow cookers may finish faster.
  3. Once hot and bubbly with a rich orange color, switch crock pot to WARM for serving. Stir occasionally and enjoy with your favorite dippers.
