Ingredients
  

  • 4 large russet potatoes peeled and cut into ¼-inch strips
  • 2 cups vegetable oil for frying
  • 1 tablespoon paprika
  • 1 teaspoon cayenne pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • ½ cup sour cream
  • 1 jalapeño thinly sliced
  • ½ cup guacamole
  • ½ cup salsa
  • ¼ cup fresh cilantro chopped

Method
 

  1. Rinse potato strips under cold water and pat completely dry.
  2. Heat oil in a large pot to 350°F.
  3. Mix paprika, cayenne, garlic powder, onion powder, cumin, salt, and pepper in a bowl.
  4. Fry potatoes in batches for 5 minutes until pale golden, then drain.
  5. Increase oil temperature to 375°F and fry potatoes again for 2–3 minutes until crispy.
  6. Toss hot fries immediately with spice mixture.
  7. Spread fries on a serving platter and top with shredded cheddar cheese.
  8. Add sour cream, guacamole, salsa, and jalapeño slices.
  9. Garnish with chopped cilantro and serve immediately.

Notes

For best results, season fries while hot and serve immediately for maximum crispiness.
