Method
- Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan to prevent sticking.
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt until evenly mixed.
- In another bowl, whisk together vegetable oil, orange juice, orange zest, and egg until smooth.
- Pour wet ingredients into dry ingredients and stir gently just until combined—do not overmix.
- Fold in cranberries, lightly tossed in 1 tbsp flour to prevent sinking.
- Transfer batter to prepared pan and smooth the top.
- Bake 50–60 minutes or until a toothpick inserted into the center comes out clean.
- Cool in the pan for 10 minutes, then remove to a wire rack and let cool completely before slicing.
Notes
Use freshly squeezed orange juice for the brightest flavor. For added texture, mix in 1/2 cup chopped walnuts or pecans. This bread tastes even better the next day as flavors meld together.
