Ingredients
  

  • 2 cups all-purpose flour or gluten-free 1:1 blend
  • 3/4 cup granulated sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/3 cup vegetable oil or melted coconut oil
  • 3/4 cup fresh orange juice from 2-3 oranges
  • 1 tbsp orange zest
  • 1 large egg room temperature
  • 1 cup fresh or frozen cranberries unthawed if frozen

Method
 

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan to prevent sticking.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt until evenly mixed.
  3. In another bowl, whisk together vegetable oil, orange juice, orange zest, and egg until smooth.
  4. Pour wet ingredients into dry ingredients and stir gently just until combined—do not overmix.
  5. Fold in cranberries, lightly tossed in 1 tbsp flour to prevent sinking.
  6. Transfer batter to prepared pan and smooth the top.
  7. Bake 50–60 minutes or until a toothpick inserted into the center comes out clean.
  8. Cool in the pan for 10 minutes, then remove to a wire rack and let cool completely before slicing.

Notes

Use freshly squeezed orange juice for the brightest flavor. For added texture, mix in 1/2 cup chopped walnuts or pecans. This bread tastes even better the next day as flavors meld together.
