Ingredients

  • 1 cup cottage cheese full-fat or low-fat, slightly drained
  • 1 cup old-fashioned rolled oats
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 1/4 cup mini chocolate chips or sprinkles optional, for rolling

Method

  1. Add cottage cheese, honey, vanilla extract, and salt to a blender or food processor and blend until completely smooth.
  2. Add rolled oats and cocoa powder, then blend until a thick, moldable dough forms.
  3. Transfer mixture to a bowl, cover, and refrigerate for 30 minutes.
  4. Scoop tablespoon-sized portions and roll into balls.
  5. Roll brownie bites in mini chocolate chips or sprinkles if desired.
  6. Place on a parchment-lined tray and refrigerate for 15 minutes to firm.
  7. Store in an airtight container in the refrigerator until ready to serve.

Notes

Drain excess liquid from cottage cheese before blending. Chilling the mixture is essential for proper texture and easy rolling.
