- Prepare Pomegranate: Cut in half, submerge in water, and tap the back to release arils. Drain and set aside.
- Chop Pears: Seed and chop pears into ½-inch pieces. Toss with lemon juice to prevent browning.
- Prepare Persimmons: Wash, remove tops, and chop into ½-inch pieces.
- Segment Mandarins: Peel and separate mandarin segments, removing white pith.
- Chop Apple: Core and chop apple; toss immediately with lemon juice to keep color bright.
- Combine Fruit: Gently mix all prepared fruit in a large bowl using a silicone spatula.
- Make Syrup: In a small bowl, whisk honey and lemon juice until smooth.
- Dress the Fruit: Drizzle the honey-lemon syrup over fruit and gently toss to coat evenly.
- Garnish & Serve: Transfer to serving bowl, drizzle with extra honey, and garnish with fresh mint leaves. Chill up to 30 minutes before serving.
