Method
- Whisk flour, cocoa powder, salt, and baking powder in a bowl.
- Cream butter, brown sugar, and granulated sugar for 2 minutes.
- Add egg yolks and vanilla; mix until fluffy.
- Mix in dry ingredients just until combined.
- Roll dough into 1-tbsp balls and press thumbprints into centers.
- Chill cookies for 1 hour.
- Bake at 350°F for 9–11 minutes.
- Heat cream, pour over chocolate chips, and stir until smooth.
- Fill cooled cookies with ganache and chill briefly to set.
Notes
Chilling is essential to prevent spreading. Re-press thumbprints while cookies are warm if they puff up during baking.
