Ingredients
  

  • 1 cup unsalted butter softened
  • ¾ cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • ½ tsp almond extract
  • 2 cups all-purpose flour
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup maraschino cherries chopped
  • ¼ cup maraschino cherry juice
  • 12 whole maraschino cherries for topping
  • ½ cup white chocolate chips optional

Method
 

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream butter and sugar until light and fluffy.
  3. Add egg, vanilla extract, and almond extract; mix until smooth.
  4. Whisk flour, baking soda, and salt in a separate bowl.
  5. Gradually mix dry ingredients into wet ingredients until combined.
  6. Fold in chopped cherries, cherry juice, and white chocolate chips if using.
  7. Scoop dough onto baking sheets and press a whole cherry into the center of each.
  8. Bake for 10–12 minutes until edges are lightly golden.
  9. Cool on baking sheet briefly, then transfer to a wire rack to cool completely.

Notes

Drain chopped cherries well to prevent excess moisture in the dough.
