Ingredients
  

  • 1 lb ground beef 85/15 lean
  • 1 9 oz package refrigerated cheese tortellini
  • 1 10 oz can red enchilada sauce
  • 1/2 cup cream cheese softened
  • 1 cup shredded mozzarella cheese
  • 1/2 medium onion diced
  • 2 cloves garlic minced
  • 1 tsp chili powder
  • 1/2 tsp ground cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish optional

Method
 

  1. Sauté diced onion in a large skillet over medium heat until translucent.
  2. Add minced garlic and cook until fragrant.
  3. Add ground beef, season with salt, pepper, chili powder, and cumin, and cook until browned.
  4. Drain excess grease from the skillet.
  5. Stir in enchilada sauce and simmer briefly.
  6. Add cream cheese and stir until melted and smooth.
  7. Fold in cheese tortellini and cook until tender.
  8. Sprinkle shredded mozzarella over the top.
  9. Cover skillet and allow cheese to melt.
  10. Garnish with fresh cilantro and serve hot.

Notes

Use refrigerated tortellini for best texture. Frozen tortellini can be used with slightly longer cooking time.
