Ingredients
  

  • 12 large fresh strawberries
  • 1 tablespoon granulated sugar
  • 8 oz cream cheese softened
  • ½ cup sweetened condensed milk
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon vanilla extract
  • 2 tablespoons apricot jam
  • 1 teaspoon water
  • Optional: sliced almonds or crushed pistachios

Method
 

  1. Wash strawberries, remove tops, and carefully hollow out the centers.
  2. Sprinkle strawberries lightly with sugar and place cut-side down on paper towels.
  3. Beat cream cheese until smooth.
  4. Mix in condensed milk, lemon juice, and vanilla extract until creamy.
  5. Transfer filling to a piping bag.
  6. Pipe cheesecake filling into each strawberry.
  7. Refrigerate for 30 minutes to set.
  8. Heat apricot jam with water until smooth.
  9. Brush glaze lightly over chilled strawberries.
  10. Garnish with nuts if desired and serve.

Notes

Use firm strawberries and fully softened cream cheese for best texture. These are best served the same day they are made.
