  • 8 oz feta cheese crumbled
  • 4 oz cream cheese softened
  • ½ cup sour cream
  • 1 garlic clove minced
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • Salt to taste
Garnish:
  • Fresh basil chopped
  • Red pepper flakes optional
  • Freshly grated Parmesan cheese
Substitution Options:
  • Swap feta for goat cheese or ricotta for milder flavor
  • Use Greek yogurt instead of sour cream for lighter texture
  • Substitute cherry tomatoes for Roma if preferred

Method
 

  1. Dice Roma tomatoes and combine with basil, garlic, olive oil, balsamic vinegar, and salt. Toss gently to coat.
  2. Let tomato mixture marinate for 10–15 minutes to allow flavors to meld.
  3. In a food processor, blend feta, cream cheese, sour cream, garlic, lemon juice, and olive oil for 3–4 minutes until smooth and whipped.
  4. Taste and adjust seasoning with salt if needed.
  5. Spread cheese base evenly in a shallow dish. Top with marinated tomato mixture.
  6. Garnish with basil, red pepper flakes, and grated Parmesan. Serve with toasted baguette, crostini, or crackers.
