Method
- In a small saucepan, combine blueberries, sweetener, and lemon juice. Simmer 5 minutes until berries soften.
- Optional: Stir in cornstarch slurry and cook until thickened. Cool completely.
- Mix Greek yogurt with vanilla extract and sweetener if desired.
- Spoon yogurt into silicone molds or mini muffin tin, filling 3/4 full.
- Add a small spoonful of blueberry compote on top and swirl gently.
- Freeze for at least 3 hours or until fully set.
- Remove from molds and store in an airtight container in the freezer.
Notes
Let bites sit at room temperature for 2–3 minutes before eating for best creamy texture.
