Ingredients
  

  • 1 cup Greek yogurt full-fat recommended
  • 1/2 tsp vanilla extract
  • Honey or maple syrup to taste (optional)
  • 1/2 cup blueberries fresh or frozen
  • 2 tbsp honey or maple syrup
  • 1 tsp lemon juice
  • 1 tsp cornstarch optional
  • 1 tbsp water for cornstarch slurry

Method
 

  1. In a small saucepan, combine blueberries, sweetener, and lemon juice. Simmer 5 minutes until berries soften.
  2. Optional: Stir in cornstarch slurry and cook until thickened. Cool completely.
  3. Mix Greek yogurt with vanilla extract and sweetener if desired.
  4. Spoon yogurt into silicone molds or mini muffin tin, filling 3/4 full.
  5. Add a small spoonful of blueberry compote on top and swirl gently.
  6. Freeze for at least 3 hours or until fully set.
  7. Remove from molds and store in an airtight container in the freezer.

Notes

Let bites sit at room temperature for 2–3 minutes before eating for best creamy texture.
