  • 4 cod fillets about 6 oz each
  • 2 tablespoons olive oil
  • 1 tablespoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 lemon cut into wedges
  • Optional: 3 tablespoons store-bought blackened or Cajun seasoning

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it.
  2. In a bowl, mix paprika, garlic powder, onion powder, thyme, oregano, cayenne pepper, salt, and black pepper.
  3. Pat cod fillets dry with paper towels to remove moisture for better browning.
  4. Brush fillets with olive oil on both sides, then coat evenly with seasoning mix.
  5. Place fillets on the baking sheet, leaving space between each. Bake 12–15 minutes, depending on thickness, until fish reaches 145°F and flakes easily.
  6. Rest for 2 minutes before serving. Garnish with lemon wedges and fresh parsley or cilantro.

For maximum flavor, ensure fillets are fully dry before seasoning and avoid overcrowding the baking sheet. Perfectly cooked cod should flake easily and remain moist inside.
