- Preheat oven to 350°F (175°C) and line an 8×8-inch pan with parchment paper.
- Cream butter, granulated sugar, and brown sugar together for 3–4 minutes until light and fluffy.
- Add egg and vanilla extract, mixing until combined.
- In a separate bowl, whisk flour, baking powder, salt, cinnamon, and nutmeg.
- Gradually mix dry ingredients into wet ingredients until just combined. Do not overmix.
- Fold in diced apple pieces until evenly distributed.
- Spread batter evenly into prepared pan.
- Mix topping sugar and cinnamon, then sprinkle evenly over the batter.
- Bake for 25–30 minutes, until edges are golden and a toothpick comes out with a few moist crumbs.
- Cool completely before cutting into bars and serving.
Notes
Use finely diced apples for even texture and balanced flavor. Allow bars to cool fully before cutting for clean edges. Store at room temperature for up to 3 days or refrigerate for a week.
