Ingredients
  

For the Hamburger Steaks
  • 2 lb ground beef 80/20 blend
  • cups saltine crackers crushed
  • 1 cup milk
  • 1 tsp Italian seasoning
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • Salt and black pepper to taste
  • Dash cayenne pepper optional
For Coating and Gravy
  • ½ cup all-purpose flour
  • 1 can 10.5 oz condensed cream of mushroom soup
  • 1 cup milk

Method
 

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a large bowl, mix ground beef, crushed crackers, milk, seasonings, salt, and pepper until just combined.
  3. Form mixture into ½-inch-thick patties, making 7–9 evenly sized steaks.
  4. Lightly coat each patty in flour, shaking off excess.
  5. Brown patties in a skillet over medium heat until golden on both sides.
  6. Transfer browned patties to the prepared baking dish.
  7. Whisk together cream of mushroom soup and milk, then pour over patties.
  8. Cover with foil and bake for 30 minutes.
  9. Uncover and bake an additional 5 minutes.
  10. Rest briefly, then serve over potatoes, rice, or egg noodles.

Notes

Do not overmix the meat to keep steaks tender. Browning the patties before baking adds essential flavor. Serve with mashed potatoes or egg noodles to soak up the gravy.
